Veggie fries

If you're looking for a healthier homemade version for french fries, try roasted veggie fries! Fries are typically made with white potatoes which contain a lot of starch, and starch turns into sugar in your body. Use carrots, parsnips, or sweet potatoes, to make a fun and delicious alternative to your standard french fry. Instead of being deep fried, they are oven roasted, giving you a much healthier version.

Ingredients:

  • 4 medium carrots and/or parsnips, or 2 medium sweet potatoes, peeled and cut lengthwise into fry-shaped pieces

  • Avocado oil (it can handle higher temperatures than olive oil so it is a great option for roasting vegetables)

  • 1 tsp chopped fresh parsley, optional

  • Salt

Directions: Preheat the oven to 400 degrees. Peel and cut your preferred fry vegetables into long thin strips (i.e. fry-shaped pieces). Toss with avocado oil and salt. Place the vegetables in a single layer on a large pre-greased baking sheet and bake for about 20-25 minutes, flipping the veggies half-way through. Make sure not to overcrowd the veggies on the sheet pan or they will steam rather than roast which means soggy fries instead of crispy ones. The fries are done when they are golden brown on the edges and fork tender. Sprinkle with the fresh parsley and enjoy!
