Chicken & veggie fritters

We are always looking for fun ways to eat our veggies and so I came up with this chicken and veggie fritter recipe that has been a big hit with the whole family. This recipe uses grated veggies so that they aren’t so obvious but you’re still getting loads of them in your meal!

Chicken and veggie fritters:

  • 3 cups grated veggies (such as 2 medium zucchini and 1 carrot, grated). You can also do grated sweet potato, broccoli stalk, or mix in other veggies you have that you’re trying to use up)

  • 1 pound chicken meat, ground. I prefer dark meat as it has more flavor but you can use white meat too.

  • 1 tsp dried sage

  • 1 tsp dried thyme

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • Salt and pepper

  • 1 egg, beaten*

  • 1 tbsp. garbanzo flour (you can also use rice flour or almond flour)

  • Avocado or olive oil or butter for cooking

Directions:

Grate the veggies into a large bowl. Add in the rest of the ingredients and mix with your hands to incorporate all of the ingredients together. Heat a large cast iron skillet over medium high heat with oil (or butter). Form the meat mixture into 16 balls roughly golf ball size, and then flatten them between your hands before adding them to the pan. You don’t want to overcrowd your pan so you may need to cook them in 2-3 batches. Cook over medium-high heat until the sides are browned and they are fully cooked all the way through, typically about 5-6 minutes on each side (depending on the thickness of your fritters). Serve with veggie fries and the sauce of your choice. These work well with ranch, ketchup or our homemade fry sauce (see recipe below).

Note: these can also be cooked in the oven. Cover a large baking sheet with foil, lightly greased, and place the fritters on the pan with space in between. Cook for 15 minutes, flipping half way through and then broil on high for 3 minutes at the end to brown them. They are not as crispy when cooked in the oven, but it is easier :)

*The egg can be omitted if you are unable to eat eggs.

Homemade fry sauce:

  • 4 tbsp mayo

  • 1 tbsp ketchup

  • 1/8 tsp. yellow mustard

Mix all ingredients together until smooth.
