Cauliflower fried rice

Looking for a quick and easy one pan meal for dinner tonight? We’ve got you covered. Cauliflower fried rice is a great one to use up the vegetables you already have with your choice of protein. We have done this with steak, ground beef, chicken, and shrimp and they all turn out great. Or you can leave it as is and enjoy.

Ingredients:

  • 3 sliced bacon, diced

  • 2 eggs, scrambled

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, finely grated (using a microplane or small grater)

  • 1 cup diced vegetables: I typically use broccoli, including the stalks. Other vegetables that work great: bell pepper, cabbage, zucchini, mushrooms.

  • 1 head cauliflower, riced (using a food processor or blender). Or you can buy it riced cauliflower in the frozen section at your local grocer which is what I do at home.

  • 2 tbsp fresh parsley and/or cilantro, chopped

  • 4 scallions, diced

  • 1/2 tsp Fish sauce

  • Salt and pepper

  • 1 lb meat of your choice, optional

Directions:

In a large deep skillet, cook the bacon over medium-high heat until the edges are browned and the bacon is beginning to crisp. Remove the bacon to a plate. Season the eggs with salt and pepper and add them to the pan. Cook the eggs through and scramble and then remove them to a plate. Add in the onion, garlic, and ginger and cook until the onions start to soften. Add in the rest of the vegetables, season with salt and pepper, and stir to mix together. Add in the cauliflower rice, season with salt and pepper, and stir to combine. Let this cook over medium heat until the cauliflower rice is cooked through and the veggies are soft, about 10 minutes. Once the rice is cooked, remove the pan from heat, add the fish sauce and stir. Then add in the parsley, cilantro, and scallions, along with the bacon and egg. Stir to combine and serve. You can top this with steak, chicken, shrimp, or eat it as it is. It’s great every way!

Note: this can easily be made vegetarian by omitting the bacon (and fish sauce). Use oil or butter when cooking the eggs and veggies since you won’t have the fat from the bacon and the rest is the same! You may need extra salt to compensate for the lack of fish sauce.
