Bacon and Egg Sandwich

Breakfast: Bacon and egg sandwich – I know what you’re thinking, “are you telling me to eat a sandwich?!” The short answer: Yes! The long answer: It’s a sandwich with no bread, of course! You can cook up the eggs to use as your “bread” and put whatever filling you want. You could use sausage, bacon, avocado, make a veggie one with tomato and spinach, or whatever you want!

To make the sandwiches, whisk two eggs in a mixing bowl with salt and pepper and pour into a buttered pan. Let them cook how they are (instead of scrambling the eggs, or folding it for an omelet), like a thick egg pancake.

Flip it once to make sure both sides are cooked and remove it from the pan. Cut into 4 quarters and you can make two small egg sandwiches.

It’s a fun breakfast, something you can pick up and eat, and tastes great. One of my favorites is bacon and avocado but get creative and find your own favorite! (Note: 2-3 eggs will make two small sandwiches as seen in the photo and generally serve one person. If you are cooking for more people, you can whisk as many eggs as you will need in the beginning, generally two eggs per person, and then follow the steps above pouring approximately two eggs into the pan at a time, cooking one egg pancake at a time. You can also use a bigger pan and make bigger sandwiches but if they get too big, it can be harder to flip them in the pan, and harder to eat them!)

Burrito variation: rather than cutting up the egg into four quarters, leave it whole, place your filling in the middle of the egg and roll it up like a burrito for an easy breakfast on the go. This works great using “pancakes” made of anywhere from 1-3 eggs, depending on how big your appetite is.
